Barley Casserole

This is a family favourite at Christmas. It is super easy to make and serves as a great side dish with ham, turkey, or chicken.

Ingredients

  • 1 cup pearl barley

  • 1/4 cup butter or margarine

  • 1 can undiluted onion soup

  • 1 can undiluted beef consomme

  • 1 to 1-1/2 cups sliced fresh mushrooms

  • 1/2 cup grated cheddar cheese


Method

  1. Preheat oven to 350 F.

  2. Grease a 1-1/2 to 2 quart casserole dish with butter or cooking spray.

  3. In a medium saute pan over medium heat, brown barley in butter or margarine.

  4. Pour browned barley in greased casserole dish, add onion soup, beef consomme, and 1/2 a can of water. Stir.

  5. Top with sliced mushrooms and grated cheese.

  6. Bake, covered with a lid or aluminum foil for 2 to 2-1/2 hours until barley is fully cooked. Enjoy!
