Barley Casserole
This is a family favourite at Christmas. It is super easy to make and serves as a great side dish with ham, turkey, or chicken.

Ingredients
1 cup pearl barley
1/4 cup butter or margarine
1 can undiluted onion soup
1 can undiluted beef consomme
1 to 1-1/2 cups sliced fresh mushrooms
1/2 cup grated cheddar cheese
Method
Preheat oven to 350 F.
Grease a 1-1/2 to 2 quart casserole dish with butter or cooking spray.
In a medium saute pan over medium heat, brown barley in butter or margarine.
Pour browned barley in greased casserole dish, add onion soup, beef consomme, and 1/2 a can of water. Stir.
Top with sliced mushrooms and grated cheese.
Bake, covered with a lid or aluminum foil for 2 to 2-1/2 hours until barley is fully cooked. Enjoy!
