Grapefruit Gin Fizz

Ingredients

  • 2 oz Rosemary simple syrup (recipe below)

  • 3 oz Gin

  • 1/2 cup freshly squeezed grapefruit juice

  • Splash of prosecco (chilled)

For Garnish

  • Ground cardamom

  • Rosemary sprigs

  • Grapefruit rind


Equipment

  • Cocktail shaker

  • 2 rocks glasses


Method

  1. Pour rosemary simple syrup, grapefruit juice, and gin into a cocktail shaker with ice. Shake to combine.

  2. Divide the mixture into two glasses with fresh ice. Top with prosecco.

  3. Sprinkle a pinch of ground cardamom on top. Garnish with a sprig of rosemary and a grapefruit peel.

Rosemary Simple Syrup

  1. Bring equal parts sugar and water with two rosemary sprigs to a simmer. Let cook until sugar is dissolved.

  2. Remove from heat and allow to cool completely.

  3. Remove rosemary and use immediately or store in airtight container in refrigerator for up to one week.
