No-Fat Chocolate Cake

In my house, this cake is known as Uncle Terry’s chocolate cake. One of my family’s closest friends, Terry, would request this cake everytime he and his wife would come over for dinner. It became a running joke but a phenomenal cake. Not too sweet and not too heavy - a perfect chocolate cake.

Ingredients

Cake

  • 1/3 cup plus 1 tbsp unsweetened cocoa powder plus more for dusting pan

  • 1 cup all-purpose flour

  • 1 tsp baking powder

  • 1 tsp baking soda

  • 6 egg whites at room temperature

  • 1 1/3 cups firmly packed dark brown sugar

  • 1 cup non-fat plain yogurt

  • 1 tsp vanilla

Topping

  • Option 1: dust with powdered sugar

  • Option 2: dust with combination of 1 tbsp powdered sugar and 1 tbsp cocoa powder


Method

  1. Preheat oven to 350 F. Assemble a 10-inch springform pan. Spray bottom and sides with non-stick spray and dust with cocoa powder, shaking out any excess.

  2. Batter: in a medium bowl, combine cocoa, flour, baking powder and baking soda. Whisk to combine.

  3. In a large bowl, use electric mixer to beat egg whites, brown sugar, yogurt, and vanilla until blended (about 1-2 minutes on medium speed). Add dry mix and gently fold to combine (do not over mix, the batter will not be smooth).

  4. Pour batter into prepared dish and bake for about 35 minutes or until a toothpick inserted in the center comes out clean. Cool in the pan for 15 minutes.

  5. Use a knife to make sure cake sides are not sticking and then remove the sides of the springform pan. Let cake cool completely.

  6. Serve cake on the metal bottom with sifted topping (either icing sugar or icing sugar and cocoa) over top. Enjoy!
