Pancakes: The ones you dream of

My girlfriend says that these have ruined all other pancakes for her - so cook at your own risk.

Ingredients

Dry Mixture
2 cups all-purpose flour
3 tablespoons granulated sugar
1 teaspoon baking powder
1 teaspoon baking soda
Pinch of table salt

Wet Mixture
2 tablespoons unsalted butter, melted
4 eggs, yolks and whites separated
2 cups buttermilk*
1 tablespoon granulated sugar

*Pro tip: no buttermilk? add 2 TBSP. white vinegar to two cup measure and fill remainder with regular milk. Let sit for 5 mins.

Equipment
non-stick spray
skillet (cast iron or griddle is best) – if using a griddle, set to 375 degrees F

maple syrup
fresh blueberries
fresh bananas


Method

1. Sift flour into large mixing bowl.

2. Add 3 tablespoons of sugar to the flour mixture. Add the baking powder, baking soda, and a pinch of salt, and sift all ingredients together in bowl and set aside.

3. Melt butter and set aside to cool slightly. Crack the eggs and separate the yolks and the whites (save both). Whisk the egg whites until fluffy using hand beater or stand mixer. Add the buttermilk to the egg whites.

4. In a separate bowl, stir the yolks until blended. Add the sugar. Stir to incorporate. Add the cooled, melted butter slowly into the egg yolk mixture stirring constantly (we don’t want scrambled eggs here). Slowly whisk the yolk mixture into the egg white mixture until fully incorporated.

5. Slowly whisk the flour mixture into the wet mixture so that no clumps form. Whisk to fluffy consistency and refrigerate for ten minutes.

6. In a large skillet, generously spray non-stick spray into pan over medium-high heat. With a large spoon, spoon a cookie-sized portion of batter into the pan. When you see bubbles forming in the middle and a nice browning on the sides, it's time to flip them (only do this once). Pancakes are fully cooked when the top of the cake becomes soft.

7. Plate them up with maple syrup and eat. If you want to make blueberry pancakes, add blueberries to the batter and do the same thing you just did before. Enjoy.
