Mango Cucumber Salad

Ingredients
3 tsp honey
1 1/2 tsp ground cumin
3 tbsp fresh lime juice
1/2 tsp salt
1/4 cup extra virgin olive oil
3-4 mangoes, peeled and cut into 1/2 inch pieces
4 mini cucumbers or 1 large cucumber, cut into 1/2 inch pieces
1/2 small red onion, thinly sliced
3 tbsp mint leaves, thinly sliced
1/4 cup crumbled goat cheese
2 tbsp sliced almonds
Method
In a small bowl, make the dressing by mixing together the honey, cumin, lime juice, salt and olive oil. Set aside.
In a medium-sized bowl, mix together the mangoes, cucumbers, onion and half the mint. Toss with the dressing and place n serving platter. Sprinkle the remaining mint, cheese and almonds on top of the salad.
Variation
To make this salad into an entree, add either 16 large cooked shrimp or 1 pound of sliced chicken breast, which can be grilled, poached or sautéed, depending on your preference. You can also use precooked store-bought chicken to cut down on prep time.
