Ingredients
1 oz Simple Syrup
3/4 oz Lemon Juice
1 1/2 oz Infused Gin
1 egg white
Infused Earl Grey Tea Gin
4 tbsp earl grey tea (I used Tetley decaf)
750 ml gin

Cocktail shaker
2 coupe glasses
Method
Infused Gin
Start by combining the tea leaves with a 750ml bottle of gin. Shake bottle vigorously and then let stand for two hours.
Strain and filter the infused gin to get as much of the tea particulate out as possible and keep indefinitely.
Cocktail
Combine simple syrup, lemon juice, infused gin and egg white in cocktail shaker.
Dry shake then shake again with ice. Strain into sugar rimmed coupe garnished with a lemon twist
